1. Abu Hassan (Ali Karavan) — Jaffa
The legendary Jaffa hummusiya that sets the standard for the whole city — and closes when it sells out.
Abu Hassan, known to many by the family name Ali Karavan, is the most famous hummus in Tel Aviv and one of the most revered in the country. Operating from a few unassuming branches in the Jaffa port area, it has been serving impossibly smooth, warm, freshly made hummus for decades, and the queues of locals out the door tell you everything you need to know.
The menu is essentially three things — hummus, masabacha (with whole chickpeas and extra tahini) and ful (fava beans) — served with raw onion, pickles and a stack of fresh pita. That focus is the point: this is a kitchen that does one dish superbly and refuses to be distracted. Eat in, mop it up with bread, and don't expect much in the way of décor or ceremony.
Crucially, it makes a fixed amount each day and closes when the pot is empty, usually by mid-afternoon. Go for an early lunch, be prepared to share a table, and bring cash to be safe.
Good to know: Go before 13:00 — they close when the day's hummus sells out. Order masabacha at least once, and it's cash-friendly.
