1. Crave — Machane Yehuda market, Jerusalem
The place that brought convincing kosher bacon to Israel — and still the best version.
Crave is a small counter operation in the Machane Yehuda market that has had an influence out of all proportion to its size. It is widely credited with introducing genuinely convincing lamb bacon to Israel, which opened up an entire category of American comfort food that kosher diners had simply never had access to.
The menu is short and executed with real precision — burgers, loaded fries, poutine and sandwiches, all built around the premise that kosher food should not be a diminished version of the thing it is imitating.
The shuk setting is part of it. Machane Yehuda shifts from working market by day to bar quarter by night, and Crave sits right at the hinge of that change.
Good to know: Counter seating only and very little room to linger — order and take it out into the market.
