1. The Drisco — American-German Colony, Jaffa, Tel Aviv
The most historically serious small hotel in the city, reopened after a long restoration.
The Drisco first opened in 1866 in Jaffa's American-German Colony and reopened in the 2010s after a restoration carried out with unusual care, down to the recovered original detailing.
It is quiet, grand for its size, and set among the timber-framed houses of the colony — a pocket of the city almost nobody stumbles into. The hotel houses George & John, one of Tel Aviv's most ambitious restaurants.
It is the boutique choice for travellers who care about the building more than about the rooftop, and are happy to walk fifteen minutes into the modern city.
Good to know: Walk the American-German Colony streets around the hotel — the timber houses are unlike anything else in Israel.
